一生难得一见娘惹菜谱 The Never Seen Dishes in your life : 椰香菠萝蜜鸡 Nangka Masak Lemak (Fried Jackfruit with coconut)

椰香菠萝蜜鸡
材料:A
嫩菠萝蜜 600克(去皮切小块)
鸡肉块 500克(沸水汆烫)
芫荽粉1汤匙
黄姜叶1片
酸柑叶3片
椰浆2杯
盐1汤匙
食油4汤匙
材料:B(舂烂成膏状)
红葱头10粒(去皮)
蒜头2瓣(去皮)
月桂豆2粒(压碎)
南姜6片(切细)
香茅1支
辣椒干10条
巴拉煎1茶匙
姜1片(去皮)
黄姜粉1/2茶匙
调味料:
盐、糖各2茶匙
做法:
1.)菠萝蜜加入1汤匙盐,放入锅,倒入适量清水至盖过菠萝蜜。煮约20分钟至软。捞起,沥干水份。
2.)锅中烧热4汤匙食油,中火炒香舂烂的材料B,慢慢加入芫荽粉、鸡肉和调味料,煮至出油。
3.)放入黄姜叶和酸柑叶,继续煮约30分钟,倒入椰浆,转小火,煮沸,加入菠萝蜜即可。

Nangka
Masak Lemak (Fried Jackfruit with coconut)
Ingredients : A
600g young jackfruit (remove peel and cut into
small pieces)
500g chicken pieces (scalded in boiling water)
1 tbsp coriander powder
1 piece turmeric leaf
3 pieces lime leaf
2 cups coconut milk
1 tbsp salt
4 tbsp cooking oil
Ingredients : B (Blend into paste)
10 shallot (remove peel)
2 cloves garlic (remove peel)
2 candlenut (mashed)
6 pieces galangal (chopped)
1 stalk lemongrass
10 dried chilli
1 tsp belacan
1 piece ginger (remove peel)
1/2 tsp turmeric powder
Seasonings :
2 tsp each salt, sugar
Method :
1.) Mix jackfruits with 1 tbsp of salt. Place it
into a pot, pour in some water until cover the jackfruits. Cook for 20 minutes
until soften. Remove and drain.
2.) Heat up 4 tbsp cooking oil in a pot, fry
Ingredients B over medium heat until fragrant. Slowly add in coriander powder,
chicken pieces and Seasonings. Cook until oil emerged.
3.) Add in turmeric leaf and lime leaves. Cook
for 30 minutes. Pour in coconut milk. Turn to low heat and bring to boil. Add
in jackfruits. Serve.
Tip : Chicken meat must be chilled before
cutting to ensure a better shape.
