1.鸭子以钳子拔去幼毛,洗净,抹干。
2. 若整只鸭,直接加入卤水中,卤到鸭肉能被筷子插入,斩件

或换另类娘惹煮法:
将鸭斩件,放四汤匙油,加:
1.两支肉桂,
2.两粒八角,
3十片生姜,
4.八粒拍扁的蒜头及十粒干葱
5半杯花雕酒,

调味
6.糖两汤匙,把鸭块炒香后
7.才加生抽、老抽各两汤匙和卤水舀进锅,加盖焖,约卅分钟,要注意汁液不要收得太干,煮的过程会出油,要将油撇去。
不管是卤还是炒,鸭肉的软硬度是按个人口味决定煮多久。

酒卤鸭
教多一样,拿两罐啤酒,跟着上面烹调,加点卤汁一起焖到些少汁,那便是酒卤鸭。因为酒精在受热时挥发,所以小孩也可吃.

卤上后,可涂以麻油,冷热吃,都香。

1. Removed hair of duck,rinse and wipe dry。
2 .For hole duck, dip into gravy,stew until the duck meat become tender,cut and serve.
Or you change another method:
Cut the duck ,heat up 4 spoon oil,add:
1. 2 Cinnamon
2. 2 star anise
3. 10 slice of ginger
4. 8 garlic & 10 shallot
5. half cup of wine.
Seasoning
6. sugar 2 spoon

Add duck meat and fry for a while
7.add soy sauce and dark soy sauce together with gravy
Cover the pot, braised for 30 minutes.

In the process of cooking duck meat,abandon the oil splits out from the meat,.

No matter stew or fry, the flex of duck meat depends to personal taste ,you can decide either you want to cook longer or shorten.
Wine braised duck
