   1977年,柔佛振林山因飞机失事名声大躁,当时人们只知蔡记螃蟹,直到“天来“想分杯羹,我建议多做宣传,所以灯箱才会有我肖像和招牌菜照,从此拿下老蔡半壁江山,这么做是因一个小地方,有两家人势均力敌,便会形成角力,不给对方独大,那我们才有福利可言。

 In year 1977, Gelang Patah Johor became famous because of the plane crash, at that time, people only knew Chua Kee Seafood Restaurant, until Tian Lai Seafood Garden want to be in on the action, I suggest him do more publicity, that’s why the light box in Tian Lai restaurant have my portrait and the photo of signature dishes. Hnece, Tian Lai took the half business from Chua Kee. I did so, because if there are two restaurant evenly matched in this small town, the both restaurant sure will compete to get more customer, then we have welfare at all.



天来海鲜 Tian Lai Seafood

因为伊斯干达区Legoland 乐高乐园,跟第二通道促进了国际游客往来,近年来好不繁荣。虽此,其他发展万变不离其宗,不外是吃海鲜、螃蟹非要有。

Because of the development of Legoland in Iskandar area, the second channel promote the exchanges of international tourist and became prosperity in recent years. Other than that, not much changes. Almost of the tourist came here to eat seafood and crabs.


曾听供应商埋怨他货钱难赚,坚持要用上好材料,价格自然贵些,在“成本高,赚额少。加上消费税,生意或许会难做。”,这时势,类似行情坏的话,初识时也听他说过,但其屋子却越住越大,全不受影响。

I have been heard that suppliers complaint about it’s hard to earn his money, because Tian Lai insist on using good materials, the price is more expensive. High prime cost, earning less money” with the GST, the business may became less and less. I also heard him said “market fell” when I first met him. But now his house became bigger and bigger, totally unaffected by unsettled market.

初来报道的人,以为家家餐厅一样,其实也不用怎样找。就那两间,谁出名?便往那家走。

The people who first time came to here, do not have to find which restaurants are the best, in Gelang Patah just have two restaurant, go to the restaurant which is famous one.


看它高朋满座,连隔壁都租来摆桌子,加上马来西亚美食台世界性常年推荐,已成网红长期霸占着炸锅地位。人就是这样,会膨胀,当不愁生意时,难免得失衣食父母,为什会被网上骂,就得检讨。再开罪,神仙都难救,这就是服务行业。除非,真上岸了。

When reached there, all seats are occupied, even the next door also rented to him to put more dining table. In addition, Malaysia Food TV recommend Tian Lai for the whole year and became the hottest restaurant. When a restaurant have a good business, the boss will became arrogant and maybe had alienated many customer. Why Tian Lai been scolded in internet? Tian Lai must take a critical examination on the inappropriate manner and attitude. If he offend more customers, it’s hard to mopping it up. This is service industry.

 上回去,我是专挑那几样。这趟,不用菜单还是前几样,选招牌上的菜。

Previously I went to there eat few dishes, this time, I order the dishes on signboard.


辣椒螃蟹 Chili Crab

别小看这的辣椒螃蟹闻名马新。进来新加坡客吃不著那股蛋香甜酸蚧味,过几天还会再来,找天来算账。

Do not underestimate this chili crab, it famous in Singapore and Malaysia. If the Singapore customer haven’t taste the sweet and sour taste of chili crab which rich in egg fragrance, they will come again.


海鲜豆腐 Seafood Tofu

昔日味道,动用了鸡蛋、豆浆、虾米、鱿鱼丝,调点盐、糖、胡椒粉蒸后摊冻、切块,再沾鸡蛋黄,裹面粉、薯粉、自发粉调的薄糊炸。外面那层是炸豆腐,内里越挖越似软软豆腐浆,好东西就是好东西,不造作。

The taste in the past, use egg, soy milk, shrimp, squid, seasonings are salt, sugar and pepper powder. After steamed and let it cool down, cut into cube, dip into mixture of egg yolk, flour, tapioca powder, baking powder and fried into golden color. The outside layer taste like fried tofu, inside it tender and soft like bean curd jelly. Good thing, not artificial.


咖喱排骨 Curry Ribs

这的金牌咖喱排骨,是先爆香叁峇、香茅、黄姜、八角、桂皮、咖喱粉才下排骨、椰浆。犹如马来人煮的干咖喱,提起根噬之肉,随之是排骨怀生骨煲的肉脆度,很快便弄得满嘴油彩般好看,美不美呀。

First, sauté sambal, lemongrass, turmeric, star anise, cinnamon, curry powder, then put in ribs, coconut milk. Like dry curry made by Malay people. Take a bit on the ribs, soon my mouth became oily like oil-panting. Beautiful or not ?


醉虾 Prawn soacked in Chinese wine

可能爱喝酒特喜欢醉虾。将海产明虾浸过枸杞子、生姜、当归煮出汁液,最后那半杯花雕掺白米酒才要命,把虾喂得醉醉地吃进肚,差点被撂倒,连吐口气都是花雕。

I love this dish maybe because of I like to drink wine. Dip the prawns inside juice that stewed by medlar, ginger, angelica. Lastly, add in Chinese wine and rice wine.


甘香大头 Kam Heong Clam

 甘香大头,每粒胖胖嘟嘟大炒码头,随香茅、虾米、蒜头、指天椒、咖喱叶拼,好比染上色素的叁峇大啦啦,两片壳被呛得张开唇,露出小鲜肉一口啜下,会辣到连舌头翘起,好够黄色。

Kam Heong Clam, stir fry with lemongrass, shrimp, garlic, red cluster pepper, curry leaves, like sambal Lala, I sucked the meat into my mouth, hot and spicy.


蜜汁鸡翼 Honey Chicken Wing

 蜜汁鸡翼,没教人失望,埋了姜汁、蚝油、麦芽糖、五香粉、胡椒粉、盐和蛋液。炸后抛蚝油、蜜糖、金桔油,粘著汁的翼就是奇怪,怎么接近烧腊味,丈八摸不着头脑。

Honey chicken wing, did not make me disappointed, marinate the chicken wing with ginger juice, oyster sauce, five spices powder, pepper powder, salt and egg white. Fried with oyster sauce, honey, Round Kumquat oil, the taste similar to BBQ pork.


叁峇苏东 Sambal Sotong

叁峇苏东,不就是用很惹味的辣椒干、黄姜、南姜、香茅、石谷仔、小红葱、蒜蓉、虾米、大洋葱,连同番茄、咖喱叶与苏东,烩到跟娘惹叁峇苏东有如同个妈生。难就难在,苏东会出水偏煮得像抹干身,咬头又好、好、好。

Sambal sotong, stewed with dried chili, ginger, galangal, lemongrass, candles nut, red onion, garlic, shrimp, onion, tomato, curry leaves and sotong. Something similar to Nyonya. The meat of sotong rubbery and elastic.

吃饱,开着车兜了几圈,看着别的海鲜店,只有一、两桌,也不知真是行情坏,还是自己餐厅出问题?鬼知道。

After my stomach full, I driving in Gelang Patah, looking at other seafood shop, only have few customers, I do not know is it really bad market or the restaurant’s problem? How I know?
