   为什么,“收录大马第一”,要从娘惹开始,那是因这族群,是东南亚只有印尼、马、新独有的民族,代表着南洋,突出一支极具特色的土生华人菜系,“娘惹菜”。


Why I want to kick start “The First in Malaysia Records” by Nyonya Food? Because this ethnic is the special culture of Southeast Asia, from Indonesia to Malaysia and Singapore, this is indigenous cuisine which can represent our Nanyang.

  娘惹、峇峇,是指最早从中国移民到大马,跟当地马来人通婚,被称为Peranakan Cina,即是土生华人意思。

  峇峇原是土耳其字‘先生’,娘惹是印尼对女性尊称。

  三百年前,在马六甲河口的爪哇市集,即荷兰街开始,就有了这不像华人的种族活动。

  现代华、巫通婚,信奉回教,大马政府也无意将其列为娘惹、峇峇,这意味土生华人绝迹。


Nyonya and Baba means the China emigrant to Malaysia and transracial marriage with Malay, and their offspring called “Peranakan Cina”, the meaning is indigenous. 
Baba” derived from Turkish, meaning “Granpa” or “Mr”. 
“Nyonya” means “married women”, it also mean as rich mistress, wife, misses and miss.
 More than 300 years ago, the Babas and Nyonyas began to live at Holland Street in Melaka. The ancient maps marked “ Java Market”.

  在经年累月以及各种因素影响,土生华人慢慢地失去原有饮食传承,代之是趋向马来佳肴,以前传自中国南方的烹调、药材和香料逐渐转向。甚至被地方同化,而当中最具特色的猪肉、鸭肉也因穆斯林的避讳再未看见。


Because of the intermarriage between Chinese and malay, so the government didn’t list this ethnic as aboriginal, so this also mean that this indigenous population will extinct.
After many years, Nyonya chinese lost their food culture slowly, replace by food which more to Malay, the cooking method, herbs and spices from China also changed. Even some of the Nyonya food became assimilated with other places. The most special characteristic in Nyonya food such as duck and pork dishes also disappear because of taboo on the other race.

  在新的北栈附近,有家从红屋文化街搬来的Nancy’s Kitchen,尚可找著近乎失传的猪肉佳肴,这得归功老板娘Nancy用了17年致力保留娘惹菜的本质,从小处做起,大处着想。


Near to the new Bei Zhan Restaurant, there is a restaurant called Nancy’s Kitchen move from Stadthuys that beside Jonker Walk. At there, you can found the pork dishes which almost disappear in Malaysia. The lady boss Nancy keep the nature of the Nyonya dishes for 17 years.

  就是多汁阿扎猪肉条,形式略跟烫水白切肉放进马来阿扎口味,有辣、有香、有酸、有甜、有脆、有爽,好高兴聚在一起效忠Bak Sambal Timun

Pork Rib with Blacknut / Bak Buah Kelnak 黑果猪肉
  台柱当然是黑果猪肉,那是印尼种果实,坚硬,在它顶部敲个洞,取出果肉,拼入酿料拌均再舀回,吃起来黑黑带粉状的内馅,有种话梅无渣加顺滑的咸甜,而被染成红皮肉嫩的肉鸡块,吸够了如豆板酱的咖喱芡,舌头收到情报,该找不到对手。


Pork Rib with Blacknut / Bak Buah Kelnak
Of course the main dishes is Pork Rib with Blacknut. Blacknut is a kind of fruit from Indonesia, hard shell, crack a small hole on top, take out the fruit flesh, put in some ingredient. Stir and insert back the flesh inside. It taste like black and some powder on your tongue, like plum have no residue, smooth and salty. The chicken pieces turn into red, soak in curry sauce, fantastic!

Peranakan Braisel Pork Sek Bak)卤肉
  是十分家庭式娘惹菜肴,以香茅、桂皮、八角、南姜、青葱、葱头、红葱头、辣椒、冰糖、老抽、盐跟肉煮与华人卤味相近,单是肉,就可细腻划分出腿肉、三层肉、瘦肉,却又不告诉它是谁,是高手,会分辨出猪身上三种肉感。


Peranakan Braisel Pork (Sek Bak)
Use lemongrass, cassia, star anise, galangal, verdant, shallot, chili, crystal sugar, soy sauce, salt and pork. Cooking like Chinese braised meat. I can differentiate which are hand and hock, pork belly and lean meat by using my tongue.

Pork in Tamarind Bak Asam)阿参猪肉
  跟卤肉不致相同,类似半肥瘦三层肉盖上熔熔糊糊的酸甜酱,有股浓浓的酸勾上点青青的辣,好不暧昧,像问你爱我吗?

Almost the same as stewed meat. Like the pork belly cover with sour and sweet sauce, the very sour taste match with very little of spicy, just like a dubious relationship, asking do you love me?

  整副尊容倒不常见,虽然只是用看不见的芫茜跟其他秘密收干材料用慢火烧,奇怪在反多了款羊肉汤的香味,得深入调查,怎样做到的。

This kind of dish rare to see. Using the coriander that almost cannot see and other secret ingredient, cooked by gentle heat. It is weird at taste like lamb soup, I have to investigate, how they made this?

Deed Fried Fish with Chilli辣椒煎鱼
 没有比之更让我有说不出喜欢,那全发自鱼肚里的辣椒容,正是它最不好惹的脾气,简单来说,就是马来风味的辣椒酿鱼。

I like it very much. The chili paste all in the stomach of the fish. Simple to say, Malay style. Top Hat (Pai Tee)Like a top of hat which is upside down. Inside it is cucumber slices, yam bean, egg, coriander, beautiful. Looks like crepe.

  仿佛顶帽子倒立,垫底是黄瓜丝、沙葛、鸡蛋、芫茜叶类,有说不出的美丽,带着薄饼馅香,光是这道小食,已忘了再欣赏那典雅的店里装修。

Like a top of hat which is upside down. Inside it is cucumber slices, yam bean, egg, coriander, beautiful. Looks like crepe.

Duck with Salted Vegetable Soup咸菜鸭汤

材料:鸭腿1只、咸菜200克、清水2公升、番茄2个(每个切成4块)

香料:阿参皮3片、姜5片、咸水梅2

调味料:绍兴酒1汤匙、胡椒粉1茶匙、盐1茶匙

做法:
1. 咸菜洗净切块,放在水中浸30分钟,沥干。
2.拿一个深锅,烧开清水,加入鸭腿、咸菜以及香料,继续煮15分钟至出味。
3.上桌前加入番茄以及调味料,略滚沸即可。


提示:用鸭腿煮汤,必须以冷水煮其他材料,不能贪快加热水,避免冷热收缩,蛋白质突然凝固,不能充分地溶解在汤中,失去原有的营养和鲜味。


 Duck with Salted Vegetable Soup ( Itik Tim)
Ingredient:1 duck drumstick, 200g salted vegetable, 2 liter water, 2 tomato (cut into quarter)Spices:3 slices asam/ tamarind peel, 5 pieces ginger, 2 salted plumSeasonings:1 tbsp shao xing wine, 1 tsp pepper, 1 tsp salt Method:

1.Rinse salted vegetables and cut into pieces. Soak in water for 30 minutes. Remove and drain.
2.Pour water into a pot and bring to boil. Add in duck drumstick, salted vegetables and spices. Cook for another 15 minutes until fragrant.
3.Add in tomato and seasonings, bring to boil and serve.

Tips:Use cold water to cook duck soup instead of hot water to avoid contraction due to the sudden change in temperatures, or else the protein in the duck meat will become solid immediately and will not be fully dissolved in the soup, thus losing nutrition and freshness.

没有世界知名的极乐寺,就没有槟城叻沙的发扬。
Without the famous Kek Lok Si Temple, without the discovered of Penang Laksa

槟城贵为美食天堂。当中亚依淡巴刹叻沙,更是该州成名最早的面食,奠定了代表地位。
Penang has the reputation as being the "food paradise", Air Itam Pasar Laksa is the most famous food at there.



虽然新加坡和印尼也發現叻沙,但其起源却在大馬,且完整保存下各種叻沙風味。叻沙這稱,是波斯語麵條,即“laksha”当时在这,尚未出现麵條,直到中國移民前来。
Although Singapore and Indonesia also discover Laksa, but it originated from Malaysia and completely keep it’s original taste. “Laksa” this name is from “Laksha” which mean noodles in Persia language. 

Noodle appeared in Malaysia after the China people emigrate to here.  


簡單叙起,其中槟城叻沙或称阿叁叻沙,组成的酸味与辛辣基本靠羅望子。千遍一律,都是用沙丁鱼肉、鯖魚肉,切丝黄瓜,洋葱仔,辣椒干,沙拉菜,包括特殊香味的越南薄荷以及火炬薑上未開放的花朵最惹味。通常用濑粉配着灵魂主料虾膏。即使减点点,都会影响叻沙性格。全加上来,是够浓、够酸、够辣、够香、汤还要够少,方能尝出箇中滋味。
Penang Laksa also called as Asam Laksa. Tamarinds bring the taste of sour and spicy to the Laksa. Almost the same, they using Sardin and Mackerel, cucumber, union, dry chili, salad, include Vietnam mint leaf and the flower bud on the torch ginger. Normally, the rice flour noodle with the soul ingredient shrimp sauce. Even cut down the ingredient a little bit will affect the taste Laksa. All sum up, it is thick, sour, spicy, aromatic, less soup.



说起在世界的口碑载道,极乐寺山下,那几档叻沙都功不可没。有说:去槟城,没有尝过这的叻沙,那不算到过。在相互影响下,几十年来,都坐满了各自熟悉顾客。
According the recommendation from around world, at foot of hill Kek Lok Si Temple, there was few stall of Laksa stall contribute to the reputation of Laksa. People said: “ go to Penang, you must eat Laksa”.

上了年纪人都听过,槟城叻沙是用鱼肉掺纸巾煮出,那时,单纯真的会相信,也曾清冷过一阵子。真要嫌,就嫌它叻沙太红。
Previously, there was rumor about “ The fish meat in Laksa was mixed with tissue paper”. This affect the Laksa Stall have a bad business. Maybe this rumor spread just because Laksa was too famous.

几十年来,能守住不变的水准,不变,那叫墨守成规,或作不进则退。当然,不变有不变的好,换句话:那叫守住传统,保住原味。给人吃过会生出原来叻沙是这种味道的信念,以后再尝新兴的,便会认为全不是那回事,没原味佳。
After several decades, the standard of Laksa do not have visible change, unchanged, means extremely conservative and old-fashioned. Of course, unchanged also have it’s advantage. 


能胜出生存下来,自然是多了样人人都能接受的新味道,学名创新,可解读为精益求精,是固步自封差?还是与时并进好?
.In another words, keeping traditional and original taste. If there are another new taste which can beat the old taste, that can be accepted by others, this new taste called as “new innovative”, also can be reading as “ improvement”.  It’s better than continue walking in the old steps or follow the time ?
