另个特点,是这间简陋餐馆,半边围着地下水源的池塘,且只做早市至下午两点卖完。
鸡肉腌过酱油、盐、老抽、麻油,放隔夜,在生米还未煮成熟饭前,连腊肠放下。目的,是给饭吸进肉香,而腊味似炊,鸡肉不会老,趁热,每口饭才会饱满软熟,烫嘴,何况梅香咸鱼,早躲在煲底跟着饭气攻心,岂有不好道理。

The Sabah Clay Pot Chicken Rice that couldn’t found in
Sabah, abbreviation: “ Sa Bao Chicken Rice”, but I found it in Johor Pontian.
这是我尝过第一档以为是华人,但看来像马来同胞。以为华族家庭,拜天公,太太却是印尼人,跟孩子讲马来话。奇怪问起,方知他是沙巴原住民卡达山人,基督教徒,华语流利。
I thought the boss is a Chinese but looks like Malay. I thought
they are a Chinese family, prays to Jade Emperor, but his wife is a Indonesian,
speak Malay Language to her children. I asked him with curious, the boss told
me that he is Sabah Kadazan aborigines, also a Christian, fluent in Chinese.

The boss Mr. Chia, his mother is a Kadazan but father is a
Chinese. Have the indigenous identity and rights. So he is the only restaurant
I felt very special.
饭档在住家外头,由父亲开创,原本是阿公的杂货店。因为闯出名堂,才要儿子从沙巴回乡经营。菜式仅有:沙煲鸡饭、鱼汤、鸡脚三样。顾客90%是当地华人,价格便宜也是特色之一。

by his father, originally this is his grandfather grocery store. Menu: Sabah
Clay Pot Chicken Rice, Fish Soup, Braised Chicken Feet, the customers 90% are Chinese,
the prices also cheap.
另个特点,是这间简陋餐馆,半边围着地下水源的池塘,且只做早市至下午两点卖完。

在大马食肆中,瓦煲鸡饭相当普遍,让人乐道,当然是金宝。世事往往就这么出乎意料?
In the Malaysia restaurant, clay pot chicken rice is quite
common. The place that famous in Clay Pot Chicken Rice is Kampar. But
unexpected…..
由卡达山杜顺人卖的鸡饭,就连布局都吃住父亲家传,媲美金宝。档位下放着数桶瓦斯,前后炉上纵横排着两行沙煲。多少水,什么米,好不好料,敢敢烧给你看,全程不过廿分钟。
The Clay Pot Chicken Rice made by Kadazan Dusun was pass
from his father. Below the stall are few barrels of cooking gas, both side of
furnace placed two row of Clay Pot. How much water? How much rice? How much
ingredients? You will see very clearly. Cooking one pot of chicken rice only
need 20 minutes.

Marinade the chicken with soy sauce, salt, dark soy sauce,
sesame oil, before the rice haven’t cooked, put in sausage. The purpose is to
let the rice absorb the taste of chicken and the chicken meat will not be too
hard. Every mouthful of rice hot, tender and fragrance. The salted fish hidden
in the bottom of the clay pot.
我也是很意外地接受这很意外的饭香味,感到很好,才敢介绍。尤其是打开煲盖那秒杀。
I am also very surprised to accept this very unexpected
aroma of rice.
鱼头汤 Fish Head Soup
这,有一半人数是为他鱼汤而来,用的是石斑块。盐、糖、生粉略拌,稍炸再跟咸菜、姜片、番茄、咸水梅煮,有种港式蒸石斑鱼腩的口感,形同烫熟鱼鳔,汤水初喝稍淡介乎清新,但渐饮渐够味胜够咸香,果真是好鲜美的汤味。
Half of the customers here ordered fish soup. First,
marinade the grouper pieces with salt, sugar, cornstarch, after slightly fried,
cooked with salted vegetables, ginger, tomato, salt water plum, like Hong Kong
Style Steamed Grouper, really delicious.
卤鸡爪 Braised Chicken Feet
吃卤鸡爪最过瘾,莫过咀嚼后,把鸡骨节宛如飞镖吐到满桌都是,而富胶原蛋白的鸡皮,塞进嘴里一转一抽,即化作一支支光秃秃鸡骨,另带股海蜇的弹牙。单是这招就够痛快淋漓?
Most enjoyable when eat chicken claws, after chewing, you
can spit out the chicken feet bone like a dart to the table. As elastic as
jellyfish.
不难发现这煲有卤香,鸡皮香,辣香,胡椒芬芳的卤液。是可以保证鸡只只脚,体无完肤。
It is not difficult
to discover this Braised chicken feet little spicy and smell of pepper.
如果假日,要去亚洲大陆最南端的龟咯游玩,回程不妨留下渔乡笨珍。他的店,该说家就在龟咯转去新山交通灯前,南益对面,修德善堂旁。没有吃过,最好见识下,什么叫卡达山人的煮饭功夫。
If want to go the most southeast place in Asia, Kukup, maybe
when in the way go back home, you can stay in Pontian. His shop just next to
Temple Seu Teck Sean Tong, opposite to Lee Pineapple Co Pte Ltd. If you haven’t
eat, you better taste it.
