TEOCHEW STEAMED FISH
Ingredients A:
Fish : 800g
Ingredients B:
Cooking oil : 1 spoon
Garlic oil : ½ spoon
Spring union : 1 stalk (cut into 2 inches length)
Coriander leaves : 1 spoon
Fresh red chili : 1 (shredded)
Ingredients C :
Fresh shitaki mushroom 2 (shredded)
Ginger : 1 piece (shredded)
Pork belly : 5 slices
Bean curd : ¼ piece
Salted vegetable : 50 g
Tomato : 1 (cut into 8 )
Salted plum :2 pieces
Seasoning(D) :
Stock: 1 cup
Salt: ½ teaspoon
Soy sauce : ½ spoon
Rock sugar : 3 cube
Fish sauce : 1 teaspoon
Huadiao wine : 1 spoon
Chicken stock granules : ½ cube
Pepper : 1 teaspoon
Method :
1. Heat up 1 spoon of cooking oil , sauté shredded ginger ,pork belly, mushroom, and stir well.
Add in ingredient B, seasoning D and bring to boil, dish up.
2. Cut 3 slits on the fish, arrange on a stream tray,steam for 3 minutes,throw the water, then pour over with the mixture (method 1.), steam another 5 minutues. If the fish is fresh, just pour over the ingredient and steam at high heat for 8 minutes until cooked.
3. Sprinkle spring onion, coriander leaves , chili and garlic oil, serve hot.

潮州蒸鱼
主料(A):
黄花鱼: 800克(石斑、斗鲳、马友也行)
配料(B):
植物油:1汤匙
蒜米油:1/2汤匙
芫茜叶:2汤匙
青葱段:2棵(切成2寸一段,叶不要)
红辣椒:1条(切丝)
材料(C):
冬菇:2朵(用烧水浸软切片)
姜丝:1汤匙
三层肉:8片
水豆腐:1/4 块
番茄:1粒(切成八瓣)
咸菜:50克(浸水切丝)
咸水梅:2 粒
调味(D):
鸡汤或排骨汤:1 茶杯
盐 :½ 茶匙
生抽:1/2汤匙
冰糖:3粒
鱼露:1茶匙
花雕酒:1汤匙
胡椒粉:1/2 茶匙
做法:
1. 烧热1汤匙植物油爆香姜丝、冬菇丝、肉丝后,把所有材料(C)煮滚,調味(D)备用。
2.鱼身斜割几刀,放进预先煮滚水的锅里蒸3分钟,倒去腥水,放下材料(C)回锅重蒸5分钟。若鱼确定新鲜,直接把煮好的材料(C)一起蒸,無须倒去腥水。
3.撒入配料(B)葱段、芫茜叶、辣椒丝,淋上蒜米油,即可

黄花鱼 笨珍货源,年尾是季节,屬黃魚類,又稱桂花魚,黃瓜魚,是近海四大海產之一,與石斑齊名。
