一生难得一见娘惹菜谱 The Never Seen Dishes in your life : 黄梨鱼 Ikan Lemak Nenas (Pineapple Fish)

黄梨鱼
材料:
红鲷鱼肚块500克(先汆烫成半熟)

配料:
清水800毫升(约3杯)
适量
白糖1/2汤匙
凤梨10
亚叁皮2
甜罗勒叶1

香料:
南姜13片(去皮)
黄姜10克(去皮)
红葱头10
红辣椒3
巴拉煎1/2汤匙

做法:
1.)将香料磨烂成膏状。放入大碗中,加入所有配料(除了罗勒叶)。调出汤汁,然后以中火煮约10分钟。
2.)加入鱼块,继续煮沸,约2分钟。
3.)熄火后添上罗勒叶提香即可。

Ikan Lemak Nenas (Pineapple Fish)
Ingredients :
500g red snapper’s stomach (scald till half-cooked)

Side Ingredients :
800g (about 3 cups) water
Adequate salt
1/2 tbsp sugar
10 slices pineapples
2 pieces assam or tamarind peel
1 stalk basil leaves

Spices :
13 slices galangal (remove peel)
10g turmeric (remove peel)
10 shallot
3 red chilli
1/2 tbsp belacan or shrimp paste

Method :
1.) Blend Spices into paste form. Place it in a big bowl and mix with all Side Ingredients except basil leaves. Mix until become stock. Cook over medium heat for about 10 minutes.
2.) Add in fish and bring to boil for about 2 minutes.
3.) Remove from flame. Season with basil leaves. Serve.

Tip :When cooking at home, bring a pot of water to boil, soak the fish in it for about 30 seconds. It could eliminate the fishy smell and is easy to cook when cooking with the spices stock.
提示:家庭烹调,可用镬烧沸水,放入鱼块,熄火浸约30秒,使鱼肉煮起来更省时。过后只需在汤汁内稍微滚一滚即熟,又可辟除鱼腥味。
