吃醋鱼
名字怪,只听过猪脚醋。能吃否?
将红枣鱼或河巴丁蒸九成熟,配以红枣、枸杞子、指天椒粒、甜醋和白醋慢火滚后淋上。干葱粒、蒜蓉、姜片、绍酒、生抽、冰糖、盐可免可用。喜欢,会感觉鱼与醋性配合得天衣无缝。较量下杭州一绝“西湖醋鱼”,只输在没它几千年宣传。


Steamed Fish with Black Vinegar
What’s  it? Never heard before.
Use Red snapper or Patin Fish, steamed  until 90% done,put aside . heat the wok,  put in red dates,wolfberries, hot chilli, sweet vinegar,  white vinegar bring  to boil under low heat, pour over the fish.Without useshallot,minced garlic, ginger,shaoxing wine,soya sauce,salt or sugar. The combination of vinegar and fish itself  bring wonderful  taste, can beat  with China “Xi Hu” vinegar fish.
