椰浆辣椒鱼  Fish Lemak Padang)食谱制作人

目前是 Singgah Selalu餐厅食谱研发总监兼经理,卅余年入厨经验。
主料:
金凤鱼 1公斤(其他鱼也行,但没金凤对味)
材料A:(连油全部磨烂)
食油 2汤匙
蒜米 10
洋葱 2 
 ½ 
黄姜 1拇指
辣椒干 15条(浸清水,剪开去籽)
香茅 4
南姜 1
材料B石古仔 8
黄姜叶 2
鲜椰浆 ½ 公斤
材料C食油 2汤匙(下镬炒香材料)
清水 1 玻璃杯
调味D味精 1茶匙(缺少味精,煮不出原味)
 1茶匙
 ½ 茶匙
 
做法:
1.
烧热两汤匙食油,慢火炒香搅烂的材料A至溢出油份,添一玻璃杯清水煮沸。

2.
接着下石古仔、黄姜叶、鲜椰浆及调味D,不停搅动煮至浓酱。

鱼放入蒸炉里蒸6分钟,倒去多余水份。加进煮滚的酱汁里。

recipe provided by Rohani Awang, F & B adviser and manager of Restaurant Singgah Selalu, 30 over years experience in cooking.

Fresh red snapper 1 kg
Ingredients A (blended)
Cooking oil 2 spoon
Garlic 10 cloves
Onion 2
Lemongrass 4 slices
Galangal 1 inch
Ginger ½ inch
Fresh turmeric 1 thumb
Dried chili 15 (rinse removed seeds)

Ingredients B
Candlenut 8
Daun kunyit 2
Coconut milk ½ kg

Ingredient C
Cooking oil 2 spoon
Water 1 glass

Seasoning D
Ajinomoto 1 teaspoon
Sugar 1 teaspoon
Salt ½ teaspoon

Method :
1 . heat up 2 spoon oil in wok, stir fry ingredient A until fragrant. Add 1 glass of water ,bring to boil.

2. Add candlenut, daun kunyit ,coconut milk, and seasoning D, turn to low heat ,stir well until thicken


3.steam fish for 6 minutes,removed and pour out excess water.

4.put into the gravy and serve.

Location : next to new Istana Johor Bahru
opposite with Danga Bay.
