简单招牌菜揭秘

材料跟足,烹调由人,又不是练神功,试多几次,两、三下步骤,EASY JOB! 把人家招牌菜煮熟!

酸甜鸡
和咕噜肉一样,换鸡块先加盐、糖、蛋白、生抽、胡椒粉、捞均干薯粉,先炸半熟,要香脆:

1. 滚油,探筷子,四周有小气泡。

2.炸时肉要分开。

3.滤去杂质,再炸多趟。

另抛洋葱、黄梨、黄瓜、番茄约半分钟,加入番茄酱、辣椒酱、酸梅酱、白醋、盐、糖与水煮成浓酱,将肉回锅。

换成半肥猪肉,用刀背拍松,切块,腌糖、盐、蚝油、麻油、鸡蛋、绍兴酒同样沾干薯粉炸,就是咕噜肉。

能让孩童流口水的肉,当然是父母最关心的事。

Sweet  Sour  Chicken
Similar with “Ku Low Yok”, chicken cut into pieces, marinade with salt, sugar, egg white , soya sauce,  pepper,  Coat  chicken cubes with flour and deep fry in hot oil until half-cooked . If you want it more crispy, you may

1. Hot the oil, put a chopstick ,surrounding there have some bubbles.

2.When fry the meat, you have to separate the meat with each other . 

3. Drain it and fry one more round. 

Leave some oil in work, stir fry onion, pineapple, cucumber,tomato about half minute until fragrant, add in tomato sauce, chilli sauce, white rice vinegar, salt , sugar,water bring to cook until thick. Pour in the deep fry chicken and mixed well. 

Same with "Ku Low Yok"( sweet sour pork ), you may use the back of the knife to hit the pork meat until tender . Cut into cube, marinade with salt, sugar, egg white , sesame oil, soya sauce,  pepper,  Coat cubes with flour and Shao Xin Wine and deep-fry in hot oil ,That it's!
